Pork Shares:
You can order Fresh or Cured pork Shares.

 

Fresh (uncured):

Half Share (aprx. 80/lbs) Fresh Pork (uncured) will include:

4 Fresh Ham roasts- these are super good, they sort of resemble the pork shoulder.

2 Shoulder roasts

8 Pork Steaks

30 Loin Chops

1/2 Rack of spare ribs

Sausage (NO MSG ADDED)- aprx. 15/lbs (packed in 1/lb packages)

2 Pork Belly (about 5/lbs each)

shank/feet/head (about 4/lbs)

 

Cured:
*York Meats does in incredible job of smoking hams and pork bellies, but they do not have USDA certification for their smoked meats yet.  If you want smoked hams and bacon, they will do a great job.  They do everything traditionally there.  They will not be nitrate free, but even the nitrate free bacon at the store can have nitrates from the celery used that has nitrates in it... I did a little research... 

 

Cured share:  you will receive the same quantities of pork as the fresh shares,  but the hams will be cured, and the pork belly will be bacon.  Bacon and Hams will not have USDA certification, but the other cuts will.

Half (aprx. 80/lbs)- $650

Whole (aprx 160/lbs)- $1200

*Grilling boxes will include some of these variety cuts, but not all:  Tri Tip, Flank Steak, Short Ribs Brisket, Kabob Meat. 

*Cooking Tip:  These cuts are full of flavor, but are a tougher cut.  I still slow cook them in the Summer.  I put them in a dutch oven on the stove top or crock pot so I do not have to turn on my oven.  They are roasts that are cut into steaks so they cook faster... you don't have to turn on your oven for 7 hours.  :)

Volume orders contain the following approximate ratios:
 25% steaks, 40% roasts and variety cuts, and 35% ground.
